To take flight on your tamed dragon, simply right-click on it and open the inventory to ride. Keep in mind that they won't fly on their own unless saddled. You can make your dragon sit or even tie it down if needed. Adding or removing a chest onto a tamed dragon is also possible through your pet's game inventory.
